Veggie Pasta with Cilantro Pesto!

This veggie pasta has a pleasant crunch, and the kicker a zesty raw cilantro pesto. Amazing colors, bold flavors, and awesome body benefits. No refined carbs, no gluten, no regrets! 



  • 3 large Carrots
  • 2 large Zucchini

Directions: Using a turning slicer (spiralizer,) vegetable peeler, or mandolin, cut into long, thin slices. Reserve and prepare cilantro pesto.


  • 1½ tbsp Olive Oil
  • 2 cloves Garlic 
  • 3 cups Cilantro (chopped)
  • 1 tbsp Salt
  • 1 tbsp Cracked Black Pepper
  • ½ cup Basil


  • Handful Cherry Tomatoes
  • ½ Avocado (diced)

Directions: In food processor, add olive oil, garlic, basil, cilantro, salt and pepper. Process until combined, should be slightly chunky. Stop processor once to scrape sides of bowl.  Add pesto to pasta, and toss. Garnish with cherry tomatoes and avocado. Enjoy! (Yields around 2 servings)
