Thai-Style Noodles

First for the video!

Have you ever tried kelp noodles?  We have tried and failed many times to make this challenging edible medium work in a raw recipe, and finally were inspired by a recipe on Rawmazing.com that worked out.  This dish is crunchy and delicious and is packed with nutrients.  Enjoy!

Marinated Mushrooms:

  • 2 tablespoons olive oil

  • 2 tablespoons Bragg Liquid Aminos

  • 2 cups mushrooms, sliced

  • 1 teaspoon salt

  • 1/2 lemon, juiced


Directions:
 Marinate together for about 15 minutes.

Sauce:


  • 1 cup walnut butter

  • 1/2 cup coconut milk


  • 1 teaspoon chili flakes

  • 1 clove garlic

  • 1 teaspoon Bragg Liquid Aminos

  • ½ lemon, juiced

Directions:
 Place all ingredients in blender. Blend until smooth. Chill for about an hour.

Veggies:


  • 1 carrot, shredded

  • 1/2 red pepper, diced

  • 2 cups mung bean sprouts

  • 2 scallions, thinly sliced

  • 2 cups kelp noodles

  • Marinated mushrooms (from above)

Directions:
 Mix marinated mushrooms together with all veggies, and kelp noodles in a large bowl. Mix in sauce, 1/2 cup at a time to taste. Enjoy!
