Mango Avocado Sushi!

As always, first with the movie!  This is a great snack to put out for guests or bring to a party.  There are a million permutations on this, so here is one that we liked..

In this Mango Avocado Sushi Roll, you will find Vitamins A, C, complex B and E, as well as minerals like iron, potassium and magnesium. Also, its fruits and veggies are full of antioxidant flavonoids. These things combined keep virtually all body systems humming. The roll presented here features broccoli sprouts believed to fight gastric disease, cucumbers to provide a natural mood boost, and omega-3 rich avocado to help lower cholesterol! The sushi roll’s high fiber content makes it particularly diet-friendly, as it will satisfy hunger though it is low in calories.


  • 4 tbsp Raw Hummus (Your choice! We used Majestic brand Chipotle Sprouted Hummus)
  • 1 Avocado (sliced)
  • 1 Mango (sliced)
  • 1 Jalapeño (sliced)
  • ½ bunch Cilantro (stems removed)
  • ½ Cucumber (julienne)
  • ½ Yellow Bell Pepper (julienne)
  • 2 Green Onions (sliced)
  • 2 Raw Nori Wraps
  • Handful Broccoli Sprouts
  • Raw Sesame Seeds (to taste)

Directions: Cut all veggies and mango accordingly, set aside. Spread hummus on near end of nori wrap; add sliced mango, veggies and sprouts. Sprinkle with raw sesame seeds. Dab far end of nori wrap with water to help seal, and roll. Seam side down, slice into bite-size pieces with sharp knife. Repeat all steps for second roll. Yield 2 rolls.
