Fresh Corn Salad

First for the Video!

This Fresh Corn Salad is a perfect appetizer, snack, or entrée side dish! Crisp, vibrant, and perfect for summer. Corn gets a bad rap, but it is actually an abundant source of B-vitamins and important minerals like magnesium; as well as being low-cal and high fiber. Don’t forget to buy organic!

Rawsome simplicity at its most delicious :)

Ingredients:

  • 1 cob of Corn
  • 1 cup Cherry Tomatoes (halved)
  • 1 cup Fresh Basil (finely chopped)
  • 1 Avocado (diced)
  • 2 tbsp Scallion (chopped)
  • 1 Lemon (juiced)
  • Salt & Pepper (to taste)

Directions: Cut corn from cob. Combine all ingredients in bowl, and serve!
