Coconut Red Berry Torte

First for the Video!!!

This is is an insane raw dessert, definitely one to impress the friends with!!!  Once you start to make raw desserts, you will be hooked, AND, the guilt is mitigated by the fact that you are getting all of those fantastic raw ingredients.  Raw cacao is filled with powerful antioxidants, but lost once you cook them.  So go raw and enjoy the goodness!

For Crust:

  • 1 ½ cup cashwes
  • 1 tsp vanilla powder
  • 2 tbsp coconut nectar

Directions: Finely grind cashews.  Add coconut nectar and vanilla powder.  Press mixture into 8-inch pan with removable bottom.  Put in freezer.

For Filling:

  • 2 cups cashews, soaked
  • ½ cup coconut butter
  • 1/3 cup coconut oil
  • ¼ cup cacao powder
  • 2 pints combined, strawberries & raspberries
  • ¼ cup Coconut shavings

Directions: Combine cashews, coconut butter, coconut oil and cacao powder, blend until smooth.  Smooth a layer of filling over the crust (save ¼ of filling for on top).  Chop raspberries and strawberries and smooth over the filling.  Top with coconut shavings.  Smooth remaining filling over berries.  Put in freezer.

For Topping:

  • ½ cup raw honey
  • ½ cup cacao powder
  • ¼ cup coconut butter (softened)
  • Coconut shavings for garnish

Directions: Combine coconut butter, raw honey, and cacao powder.  Stir until smooth.  Smooth topping over refrigerated torte.  Garnish with coconut shavings.  Freeze for 1 hour.  Cut and serve!
