Want an awesome holiday dish that will knock the stockings off your guests? Try this coconut ceviche, it’s super easy to make and is totally delish. And look at those holiday colors!!!
- 2 Young coconuts, meat julienned or noodled
- 2 Limes, juiced
- 1 Lemon, juiced
- ½ Cucumber, diced
- 1 Red pepper, diced
- Handful of cherry tomatoes, chopped finely
- ½ Small jalapeno, diced
- 1 Clove garlic, chopped finely
- Handful of cilantro, chopped
- ½ Red onion, diced
- 1 Avocado, diced
- 1 Pinch of salt
Directions: Combine all ingredients in a bowl, cover and let marinate for 1 hour in the refrigerator. Serve with cilantro, avocado, and raw chips.
