Citrus Salad!

First for the video!

This salad is colorful and refreshing, perfect for summertime!  The sunflower greens in our salad mix are a source of complete protein, as well as Vitamins A, B, D, and E. Sunflower greens are rich in chlorophyll, and minerals including calcium, iron, potassium, and magnesium. The pea greens in the mix bring a lovely sweetness and serious vitamin power (A and C to be specific). And finally, watercress! This is a mild green revered by the Romans for its medicinal and nutritional value. It brings superfood power too lengthy to fully list, but let’s just say it has Vitamins A, B, C, E, and K, high levels of calcium, fiber, magnesium, potassium, beta-carotene…. Get the picture?! This is already a super-salad and we still need to talk citrus! Orange, grapefruit, and lemon are packed with Vitamin C, good for everything from boosting energy to fighting wrinkles! These citrus fruits are also rich in fiber, and flavonoids to help reduce bad cholesterol. Citrus is a dieter’s friend; its fiber contributes to feeling fuller, longer, helping to banish cravings. Grapefruit and lemon go a step further, helping the body to flush out toxins, and stimulating the metabolism.

A beautiful and healthy recipe, pleasing to the eye, palate, and body!

Dressing:

  • Juice of 1 Lemon
  • ½ cup Olive Oil
  • Salt, Pepper, Paprika (to taste)

Directions: Whisk all ingredients in a bowl.

Salad

  • Mix of Watercress, Pea Greens, & Sunflower Greens
  • ½ Grapefruit (peeled & chopped)
  • 1 Orange (peeled & chopped)
  • Pecans (chopped for garnish)
  • Raspberries (chopped for garnish)

Directions: Make a bed of greens, place grapefruit and orange on top, garnish with pecans and raspberries. Drizzle with dressing. Enjoy!
